I love scrambled tofu. To me there is nothing better than a big ol' plateful of rich buttery goodness mixed with whatever you have on hand in the fridge.
For this one I had some white beans left over so I just sauteed them with a little olive oil, shallot, turmeric and nutritional yeast. Once the spices had been cooked out I added about half a pound frozen, then thawed and drained firm tofu. You have to cook the tofu for a good 5-10 minutes in my opinion so it really picks up all the flavours and develops some body. I added a touch of white truffle puree and about a tbsp of white truffle oil. I let the scrmabled tofu sit for another five minutes or so before eating as this allows everything to come together.
I finished the dish off with the sweetest imported sun-dried tomatoes from Italy you will EVER put your pretty little mouth around and some baby basil seedlings.
POWERED BY TOFU!!!!!!!!
p.s. if any of you are on facebook please look for me, I am obsessed with it and i post other pics on there and argue with people all the time about Veganism and hunting etc....

Mmmm...I love sun dried tomatoes!
That sounds heavenly. I've never heard of being able to buy baby basil seedlings but yours are so cute it makes want to plant some right now.
It looks so good. I just made a tofu omelette, sort of. White beans are so good too. Did you use truffles or truffle oil.
What's the deal with facebook? I've avoided that and myspace, but everyone seems to be on them, even people you wouldn't expect.
Sorry nevermind, I reread and saw you used both truffle puree and oil. Oops I misread.
I wish I had the money for fresh white truffles!!!!!!!!
this boy just uses the cheaper stuff......
Facebook is the best!!! it lets you connect and stay in touch with soo many people and go to events all over where you live....
I love it
That tofu scramble looks absolutely delectable - the sundried tomatoes are a nice touch! Oh and thanks for adding me on Facebook!

i'll look for you on Facebook. i am a huge huge huge scrambled tofu fan and love to put sun dried tomatoes, mushrooms, spinach and onions in there. Yours looks wonderful!
Don't be fooled!
Human being are omnivores, not herbivores! That means they eat both meat and veggies! That's why we have those pointy-teeth. Humans evolved from hunter-gatherers, and were never meant to be vegan.
Humans are meat-eaters!
Rabbits are vegan!
Don't support veganism!!!
oooooooooh, that looks divine.
i adore sun dried tomatoes in a tofu scramble. yum!
Hi Doug! I've found you by way of many of my other blogging pals. I'm also on Facebook, so I'll send you a request.
For whatever reason, I've never made tofu scramble, so thank you for the little tips.
How many VEGAN-L subscribers does it take to change a light bulb?
Most of them. One to change it and post a little joke about it to the list, one to post in saying "I got it", one to post in saying "Yes, but they have herbal remedies for it nowadays", one to post "And homeopathic ones too, I read somewhere", one to post in saying he accidentally deleted the original light bulb joke and could someone please post it again or email it to him, one to post in quoting everything so far and the words "Me too", two to turn it into a cascade, one to post "What's this light bulb joke you're all talking about then?", one to post "I dunno, it sounds like some kind of food", one to post "In that case, has anyone got a recipe for one then?", one to post in requesting Michael Traub look up and tell us all its B12 content, one to post "Will it help cure my auntie's arthritis?", one to assert that it probably won't, but its effectiveness at this might well be increased by accompanying it with some shiatsu and meditation, two to condemn that as too unscientific, one to ask whether light bulbs are totally vegan, one to post "Read the FAQ", one assert that they are and add "I like light bulbs. They're low in fat, and stay crunchy in soya milk too !", one to announce that she's leaving the list unless the discussion gets a bit more meaningful, three to post in reassuring her that eventually it will, Lissa Mosley to post that the list moderators feel they must respectfully request that the discussion be moved to private email as it has been going on far too long, one to agree with this and add "So what has all this got to do with ethical veg*nism anyway?" and suggest the discussion be moved to alt.fan.lightbulbs , and one to post in quoting this suggestion and add "What's that?". So the discussion moves to usenet, as our intrepid vegan-l subscribers venture beyond the boundaries of email, and alt.fan.lightbulbs finds itself taking a few days off from the "My incredible light" and "Light Bulb death" discussions and come up with some new jokes...
Where do you get your facts on PJ's Pet Centre? I am a regular customer and usually they allow me in and purchase right after close because I work in the mall aswell. I bought my puppy and fish there and they are both healthy. I feel sorry that I didn't get one of your fake flyer's and about this puppy mill business. I got further information on them before purchasing my dog and she did not come from a puppy mill nore other. I pitty you because you should be doing more research before making an ass of yourself vegan doug. keep to cooking and grow up because clearly you hate PJ's for another reason and I feel you should move on kiddo.
Looks like good food!
That cow looks delicious!!!
